In The Kitchen: Vegetarian Sausage


I came across this video yesterday for Vegetarian Sausage while doing a search for breakfast sausages on Youtube. Doesn't this look exactly like a real sausage? You'll never guess what it is!

It's Oatmeal! Can you believe it!

The recipe is really simple and it tastes pretty good too. It did taste a little unfamiliar to me I must say, of course the texture was a little different but the spices aren't familiar to what I'm use to in a sausage. I'll have to play around with different spices until I get something that I like as it relates to having a permanent sausage replacement. The spices I'm about to include below weren't horrible, just as it relates to making something that will mimic meat in a way that I'm use to I think I'll see if I can get that flavor otherwise this will do it just fine for me. Also my goal was to create a vegan sausage but I hadn't had an official meal for the day and didn't feel like trying to wrap my brain around what I could use instead of the egg so I went with the egg. I'll do an updated recipe once I try a veganized version.

Enough of my chatter, here is the recipe:


Makes 4 Large Patties


1 cup uncooked oatmeal
2 eggs  (can use an egg replacer to make these vegan)
1 teaspoon ground sage
1 teaspoon ground fennel
1/2 teaspoon ground rosemary
1/2 teaspoon dried parsley
1/2 teaspoon dill
1/2 teaspoon salt
1/4 teaspoon pepper
2 – 3 cups vegetable stock

Mix all ingredients except the vegetable stock and form into four patties. Place canola oil in a frying pan, just slightly more than you'd use to coat the pan. Iif you are using a non-stick pan feel free to use just enough to coat the pan, cook over medium heat.

In a pot large enough to hold your four patties, add your vegetable stock and bring it to a boil, reduce heat, place your patties into the stock and allow to simmer for 20 minutes.

Remove patties from the liquid and drain them to remove any excess liquid. Once the patties are drained, re-browning the patties and serve.  If you do not plan on serving these right away. Hold off on re-browning them until you are ready to cook and serve them They will keep in the refrigerator for a few days. 

Be sure to pack your patties tight enough so that they don't fall enough, but not o tight that the liquid isn't able to reach the center of the patty. I packed my patties a little too tightly and had a few dry spots, it didn't take away from the flavor but made it a little dry.

Faith: Unashamed Grammy Win

 I just got finished checking my facebook page to find out Lecrae just one a Grammy! So godly proud and happy for him not just as one of my favorite artists but this win represents so much when it comes to what we're called to do as Christians.

I remember not too many years ago when Reach artists were looked at as artists that wouldn't work with secular and mentioned Christ too much in their lyrics.   I get the argument on both sides, nobody is saying veil Christ but speaking on how you have to reach the lost not talk at them or close yourself off from them. Yet it always confused me because what often times got lost is the fact that the Lecrae's of the world were the lost and that's what they were doing, speaking on the God that saved them.

Coming into present day an announcement was made by Reach Records that he would release a mixtape with (Secular) DJ Don Cannon (Who happens to be from Philly shot out Philly ehh erm) and other moves that Lecrae made that would push his "brand" further into the mainstream. When I heard about it  I was proud because I knew that would be the man you'd want to put in that position not biggin him up in that way but in seeing his faith and seeking God in what he does. Yet I'll be honest I was a little worried for him and prayed for him while also believing he sought God before doing anything.

Today these efforts have got my man a Grammy win, a broader audience (do you see all of those likes that post wasn't more than 30 minutes ago!) music produced with and by some of the best in the industry and the music is still as relevant as it's been from day one. None of these things are important as it relates to fame and money or status. It's huge as it relates to being unashamed of the gospel and spreading it among all nations, giving it to those that are sick and in need of a Physician. Having doors open that would have remained closed if it weren't for the faith to move into the "forbidden lands". I'll be honest I haven't listened to as much hip hop or followed what's going on with folks as much as I use to so I don't know the stories of who has been reached by the efforts but knowing that they're being reached and most importantly God sees and will make the increase.

We can at times seek to come up with creative ways to reach the lost when it's the Lord that sends us, not our efforts that ultimately saves them. Or we can fear the ways in which we "team up with the world" missing that it's God that's sending us therefore never moving into the unreached places. If we fix our eyes on Christ, pray stay in His word and walk in obedience we will hear from Him and do that which He's called us to do. Not all of our missions will end with Grammy wins but it will be greeted with a well done my good and faithful servant from the untoppable rewarder when we see Him face to face.

Working on my book!


It's Saturday and that means participating in the Saturday Morning Coffee blog hop! It's another cold one in the city of Philadelphia so more staying in for me (see last week's post) but my plan will be a lot more simplistic this Saturday compared to last. Today my plan is to do the laundry, the usual Saturday cleaning routine. And then I'm going to focus on working on my book!

Yes you've heard it right I'm writing a book,  a book that's currently untitled but related to singleness. This is something I thought I'd write once I'd gotten  married, not as a single woman. It wasn't until I had a conversation with someone that encouraged me to write it now that it even came across my  mind. The reason I anticipated writing this book once married is due to the fact that it has much to do with the process of getting to marriage. However after the discussion with the person, I decided to pray about it and asked God to show me what I'd write about and there is indeed a lot that I need to share with fellow singles based on what the Lord directed me to.


So I'm grateful for the individual who brought it to my attention and I'm grateful to God for allowing me to be used in this way. I've been working on the book off and on for about a month but I'm finding everything is just now really flowing.


Please keep me in prayer as I commit to this. I'm not typically shy about sharing my story, yet I ask for prayer as it relates to exposing myself. I also ask for the strength to do it even on the days that I may not feel like writing one word. And that God would receive all of the glory, every word shared will be a reflection not so much of what I've experienced but what He's done and is doing, may it bring life to the reader.

A Day in the Life with John Fetterman

Lately it seemed like anytime I'd watch something on Hulu I'd seen a commercial for the show A Day in the Life. This particular episode featured the Major of Braddock Pa., John Fetterman and the efforts he's been making to bring life back to a dying city.  I could tell it was something that would be of interest to me so I decided to check it out, one day and finally remembered to do so today.

Braddock is in the east suburbs of Pittsburgh, and according to Wikipedia had a population of 2,159 in 2010. Due to society shifts, Braddock began to take a decline in the area of work availability, housing, etc. Fetterman is the man that decided to roll up his sleeves and create change for the better. He even did so much as to get a ramp installed for one of the residence that is in a wheelchair and at the time of the show, was in the process of buying a van for him to travel to work (as well as a means of transportation for his family)

It's just another awesome example of what can happen when people began to invest in the places they live in. Not just for the livelihood of themselves and their families but for the greater good of their communities as a whole. I'm once again inspired as it relates to making change in my own city.

Staying in Saturday


It is a cold wintery day in the city of Philadelphia so I've decided to plan out my day based on staying in this house! Well all except for the laundry because I'll need to leave the house to get that done but all else with this cold weather and the snow we received yesterday, I think it's a good Saturday to enjoy the time in.

Anyone that knows how much I'm on a run on Saturdays will understand my need to make this sort of list! Cleaning and laundry is typical to this day but I figured I'd get in some of the deeper cleaning I've been waiting to do once Spring got here. I have a "beauty room" I'm working on, some things I need to prepare to donate to charity, decluttering etc. It won't all get done today but I might as well get the ball rolling.


Netflix is a norm for me now I enjoy seeing some of the movies I've missed in theaters, some I've seen but love watching again, and those movies I'd never go out to see on my own but end up enjoying them. Starbucks, not exactly making it to the store today but I brought a box of the instant stuff that I'll be making use of today and meal planning is something new I'm doing to ensure I'm carrying lunches during the week and working towards reaching my weight loss goal.


Studying the word, think I'll continue my study of Job and I may actually open a real bible today LOL, so use to utilizing an app now but there is something about going through those pages, highlighting certain points and having that concordance all in one spot. Especially with my ESV study bible. Plus when I study online my mind wanders, I'll stay focused on what I'm studying for example if I'm studying love, I may want to look up the word love and then I'll remember an article on a site or blog related to the word that I wanted to read so I'll go to it etc. So every now and again I have to get the book in front of me get in a quiet place and just dig.


And that's it for me and with it being almost 12:00 now I guess I best to get started! Late start talking to the kid this morning and getting her out of the house to shovel.

Faith:There's that song again!

So I'm on the orange line platform this morning waiting on my train to take me to the workplace when God decided to have me hear I trust you again by James Fortune. Still recovering from my brokenness from the night before in which I declared to God what I am tired of, what I won't pray about anymore, how I don't get it, and while I get some things are a wait, how can you explain the varying things that have taken place in my life that's taken years with no answer and no clear direction? That's all good when things seem like they're going to fall completely apart but God somehow prevents it from happening right in the nick of time vs. when things literally are falling apart all around you, have been for a long time and it feels like God has no care about what you're dealing with and you wonder if you need to be doing more or if this really is a waiting situation. Then you remind yourself of how you tend to be a doer naturally and the massive amounts of doors that shut in yo face hence the reason you've determined it's trust God or bust. Don't think woman waiting on a husband type of when God, think Job's life falling apart type of when, Joseph in prison when, that stuff that we read about and it blesses our soul but to go through it!!!


Normally I'm mad encouraged when I hear this song in these moments because I know it's God. That's not to say it's God anytime I hear this song now, but when it is Him and I know this is our song for the moment, it's typically something that brings me joy. Today I wasn't feeling it but at the same time about to ball on that orange line platform and thanking God because at least that didn't go down in front of the people I commute with every morning. I listened to it but I didn't smile, didn't appreciate it  and I was still  mad. You know that mad when you're mad at the one you love but you still love them but you don't want to acknowledge it at the moment? That level of mad. But then they do something that pierces through the anger and make you feel there love and therefore you know you want to respond in kind but not ready to let go of your anger? That level mad.


I'm still not 100 yet, but I'm fool so I got some stuff in order right quick. That get yourself in order because this is a parent, not a friend that you're mad at! And I know I'll get there and that I heard from God once again that in spite of how chaotic everything is around me He knows and I must trust Him so I'm choosing to do just that.

Overcoming Oppression-Sho Baraka

 Sho Baraka did a video that represents my heart so much  so that I want to put in my about page what Sho said! It's what made me want to focus on specifics to my city on my personal blog and it just got me a lil bit more hype to ensure I'm pushing forward in efforts to rebuild the city in the areas that need rebuilding, not just the physical city but the souls of the people that live in it.


I always say a city is only as good as its residence and many areas of Philly reflects the brokenness and deadness of it's people. Yet giving them the gospel, coupled with food to eat for the hungry, jobs to the jobless, love to the loveless, education etc. Than we will see the power of God working through them and it will also reflect on our fair city.



Now before I get in total soapbox mode:) Go on, check out the vid!


BTW been a slow blogging week due to work business, power outage and few other things but I'm bizaak! And should get a few more posts in this week.

To shave or not to shave, that is the question

I'm seriously contemplating rocking this style below:



A friend posted it on facebook  and I am in love. I've wanted to cut my hair like this for some time now actually but when I factor in how long it takes for locs to grow to the length I currently have, I really have to be sure that I want to commit to this haircut. I could always cut them and reattach them when I'm ready to grown my hair out again or I can add loc extensions which I currently have a few in my hair already. And in case you didn't notice I'm thinking this through as I type:) I'm thinking when the warm weather blesses my fair city I will be going for it.


As you can see from my pic below, my locs are thin and lifeless. Well they feel that way to me right now at least. I'm trying to figure out why they're coming in so thin, I've always had a head full of very thick hair and I know the fact that I'm interlocking has something to do with it but they feel extremly thin to me. And then the back of my head and a portion of the side (not pictured) already likes to break off so the natural thing would be to just set it free.....still convincing myself:)


Actually looking at these pics my hair isn't all that bad I think I'm just ready for some change and waiting for it to get to the length I'd like for it to be is getting old. So yeah it'll happen,  what I'll most likely do is shave one side along with my already short nape area that I just began attempting to regrow, and I'll decide if I want to go all the way from there. My nape area was shaved over the Summer actually and I loved it, the only thing was if I wore my hair down it looked awkward in the back in my opinion. So that's something to consider but with the style pictured the shaved portion will always be a part of the actual style hmmmm ok maybe I'm not settled on it completely.

Eats: Sawatdee

Sawatdee is a Thai Restaurant in Philadelphia that I have come to learn. Now let me say one thing about me is when it comes to restaurants, I am truly a creature of habit. So I've only tried one entree here but I can vouch for all of their soup offerings, I've gotten the vegetarian version of three different kinds and all were good and I've tried there crispy tofu appetizer which was bland but good. I had this particular appetizer at another Thai restaurant and it was bland there also so I believe that's just the nature of it and the sauce is what makes up for the blandness.


Ok so onto the food, as you can see I almost forgot to take the pic to blog this so there is a half eaten spring roll pictured, The soup is the Kaeng-Jeud-Tao-Hoo which is Tofu, Napa cabbage, Shitake mushrooms, celery and scallions all in a clear broth. And I am not able to speak the language so I apologize for not knowing and point to the pic, I figure if I go a few more times I'll be able to actually pronounce what it is I'd like to order.


Next to the soup is Por-Peah_Taud which as I'd mentioned is a spring roll and it actually has a lot of the same ingredients as the soup, very tasty but reminds me more of a thinner egg roll than a spring roll, which is not the impression I typically get when eating a spring roll. And not a bad thing at all.



The main entree is Choo Chee Pla w hich is pan fried tilapia with choo chee curry, coconut milk and baby bok choy.....sooooooooo good! I love this dish I keep trying to think of ways I can make this at home but don't even want to bother because I need it to come out exactly the way this dish does when I visit Sawatdee. It comes with a side of jasmine rice and as you can see the coconut milk sauce looks almost like a soup under the fish yet it doesn't take away from the crisp of the fish at all, all of the flavors combine wonderfully and while I need to see if I can locate a calorie count for this meal, pretty good portion and hip friendly for me. When I eat this meal it usually fills me also to the point that I'm not interested in eating dinner I'll have some fruit or a smoothie or something. I should say when I've had it I think this was only my 3rd time having it but again I say I love it. I think I'll at least try a version of this at home, something with coconut milk and tilapia with the mind frame that it's not going to taste like Sawatdee's, enjoy it for what it does taste like.

Also I haven't asked but I think I'll ask if I could get the fish broiled or pan fried without the breading and see how I like it that way.


And hopefully I can get in there and try something different some day, when I do I'll share an update. No as a matter of fact I need to go with a friend that'll order something different and try their food first, yeah that's the ticket I'll bring a friend next time:)
